We've designed this ranking system to help you select an array of coffee that will please your entire clientele. Simply count the cups under each of the coffee characteristics. As the number of cups increases, so does that particular quality. Coffee are rank on a scale of 1 to 4 • where one cup designates a light characteristic and four cups designates a strong characteristic.
 
For example, the coffee on the right would be full-bodied, with a somewhat strong flavor, medium acidity, and a light aroma. Body Flavor Acidity

Body Starts with a light "e;thin"e; mouthfeel (one cup), and progresses to a full-bodied, "e;heavy"e; mouthfeel (four cups).
Flavor Ranges from mild (one cup), to deeply rich (four cups): by far the most subjective of coffee characteristics, we've tried to rank flavor in terms of its distinctiveness. Distinctiveness does not necessarily mean better: many coffee drinkers prefer mild brew.
Acidity Acidity can be low (one cup) or high (four cups). As acidity is best described as a pleasant tangy "e;bite"e; at the first taste, it is considered a desirable quality by many drinkers.
Aroma Because the sense of taste and the sense of smell are so closely related, the presence of a powerful, evocative aroma can really enhance the experience of a great coffee. Many exceptional coffee do not have a notable aromatic quality (one cup), while others, when brewed, pervade a room with a desire to drink coffee (four cups).
